Food stalls have alwasy been a prominent part of Japanese culture. During The Edo Period (1603–1868)Yatai emerged as Japan's original "fast food". Stalls popped up all over Edo (now Tokyo) to feed the bustling city's workers, serving staples like soba noodles, tempura, and early versions of nigiri sushi.
Takoyaki was invented in 1935 by a street vendor named Tomekichi Endo in Osaka, Japan. His original shop, Aizuya, still operates in Osaka today, serving the classic recipe without sauce or mayonnaise.
Choboyaki is a slightly flattened, rectangular predecessor of takoyaki that used to contain beef or konjac instead of octopus. The original form of Takoyaki.
We loved the name Chobo because it represents a small bite of Japanese flavour. Bringing Japanese food stall culture to London we aim to highlight the Small and simple, the perfect sized bite.
